Organic einkorn wheat berries freshly stone-milled to order. Einkorn has a nutty flavor that is sweeter and more mild than spelt. It has a really weak gluten structure and doesn’t seem to absorb as much water as other whole grains, so you can’t really substitute it 1:1 in recipes. It makes wonderful bread, pizza dough, and baked goods. I used all purpose einkorn flour to make the vanilla sponge cake layer of my wedding cake!
